Steel cut oats is one of our favorite things to eat for breakfast. (My kids have no idea that they are eating a healthy breakfast... Shhh. Don't tell.) This is by FAR our favorite way to make them, not to mention the easiest!
To make Apple Pie {slow cooker} oatmeal...
You'll need:
1 1/4 c. steel cut oats (also called pinhead oats or Irish oatmeal. I do NOT reccomend rolled oats. They get WAY gross and mushy)
4 cups water or 3 cups water and 1 cup apple juice
1/4 c. brown sugar or honey
1 packet spiced cider
3 apples; cored, pealed, and diced
1/2 tea. cinnamon

Place the steel cut oats in your crock pot (I use my small crock pot. Using a large one may cause the oats to burn and stick to the edges. If you don't have a small crock pot, I recommend doubling the recipe. Don't worry, it stores well for about 2 weeks). Add water and spiced cider. stir. Top with apples and cinnamon. Cook on LOW for 5-6 hrs (or high for 1 hr and warm until you wake up if you're lucky enough to sleep more than 6 hours.) When you wake, it is hot and ready for you. We top with vanilla soy milk. SO delish!!
